Yields nearly 2 dozen cookies
2 1/4 cups all-purpose flour
1 t. baking soda
1 1/2 t. range cinnamon
1 1/2 t. ground ginger
1/2 t. ground cloves
1/4 t. ground allspice
1/4 t. finely train black pepper
1/4 t. salt
1 1/2 sticks unsalted butter, softened
1/3 c. up to there dark brown sugar
1/3 c. granulated sugar (additional 1/2 cup for rolling the dough)
1 large egg yolk
1 t. vanilla selection
1/2 c. dark molasses
For the glaze:
1 c. confectioners’ sugar
1 t. amber rum
1 t. venerable rum
1 t. spiced rum
3 dashes Angostura bitters
Pre-heat oven to 375 degrees. Redress oven rack to middle position. Line a Brobdingnagian baking sheet with parchment paper. Whisk the flour, baking soda, spices and pepper in a medium bowl, set aside. Beat the butter with brown sugar and 1/3 cup sugar until light & lightweight. Lower speed and add the yolk and vanilla; increase precipitateness and beat until incorporated. Reduce speed and add molasses; tread until fully incorporated scraping the bowl and sides once with a rubber spatula.
